Black bean tamale pie is a delicious and hearty dish that is perfect for satisfying your cravings. To make this mouthwatering treat, you will need the following ingredients:

* 1 cup black beans, drained and rinsed
* 2 cups vegetable broth
* 1 tablespoon olive oil
* 1 onion, chopped
* 3 cloves garlic, minced
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 1/2 teaspoon salt
* 1/4 teaspoon black pepper
* 2 cups cooked brown rice
* 2 cups cooked quinoa
* 1 can (15 ounces) diced tomatoes, undrained
* 1 can (8 ounces) tomato sauce
* 1 cup shredded cheddar cheese
* 1/4 cup chopped fresh cilantro
Instructions

1. Preheat the oven to 375°F (190°C).
2. In a medium-sized pot, combine black beans and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 30 minutes or until the beans are tender.
3. Meanwhile, in a large skillet, heat olive oil over medium heat. Add onion, garlic, cumin, chili powder, salt, and black pepper. Cook for 5 minutes or until the onions are softened.
4. Stir in cooked rice and quinoa, diced tomatoes, and tomato sauce. Mix well to combine.
5. Transfer the mixture to a 9x13-inch baking dish and sprinkle shredded cheese on top. Bake for 20 minutes or until the cheese is melted and bubbly.
6. Remove from oven and sprinkle chopped fresh cilantro on top. Serve immediately and enjoy your delicious black bean tamale pie!
