Glazed Fresh Strawberry Pie Recipe
Ingredients:
- 1 (9 inch) pie crust, unbaked
- 4 cups sliced fresh strawberries
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1/4 cup cornstarch
- 3/4 cup granulated sugar
- 1/4 cup unsalted butter, cut into small pieces
- 1/2 cup heavy cream
- 1 large egg, beaten
- 1 tablespoon coarse sugar (optional)
Instructions:
1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. In a large bowl, combine the sliced fresh strawberries with 2 tablespoons of sugar and 1/4 teaspoon of salt. Stir well to coat the berries.
3. Pour the strawberry mixture into an unbaked 9-inch pie crust, spreading them out evenly. Sprinkle the cornstarch over the top of the strawberries.
4. In a medium saucepan, combine the remaining sugar with 1/2 cup of heavy cream. Bring to a boil over high heat, stirring constantly until the sugar dissolves and the mixture thickens.
5. Remove the saucepan from the heat and quickly add in the butter, whisking until it melts.
6. Pour the mixture back into the saucepan and return it to the heat. Bring to a boil again and cook for 1-2 minutes more, whisking constantly.
7. Remove the saucepan from the heat and pour the mixture over the strawberries in the pie crust.
8. Use a fork to carefully lift up the edges of the pie crust and let any excess glaze drip off. Then use a spatula to spread the remaining glaze evenly over the top of the pie.
9. Brush the beaten egg over the top of the pie.
10. Sprinkle the coarse sugar over the top of the pie (if using).
11. Bake for 45-50 minutes, or until the crust is golden brown and the filling is set. Allow the pie to cool completely before serving.
