Making Green Bean Bundles in Sweet Pepper Sauce, Grains, and More!
Ingredients:
* 1 lb green beans, trimmed
* 1/2 cup quinoa or rice
* 1/2 cup canned sweet pepper sauce
* 1 tbsp vegetable oil
* Salt and pepper to taste
Instructions:
1. Begin by preparing the grains. Rinse quinoa or rice in cold water until the water runs clear. Drain well. In a medium-sized pot, combine the grains with 2 cups of water. Bring to a boil, then reduce the heat to low and cover. Let the grains simmer for about 20 minutes, or until cooked through.
2. While the grains are cooking, prepare the green beans. Trim off the ends of each bean and cut them into bite-sized pieces.
