* Golden potatoes, peeled and diced

* Gala apples, cored and chopped
* Cucumbers, sliced
* Celery stalks, thinly sliced

* Lemon juice
* Olive oil
* Dijon mustard
* Honey
* Salt and pepper to taste
* Fresh parsley or chives, chopped (optional)
Steps
Green and Gold Salad Recipe
Ingredients:
- 2 cups mixed greens (lettuce, spinach, arugula)
- 1/2 cup sliced red onions
- 1/2 cup grated carrots
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped chives
- 1 avocado, diced (optional)
- 1/2 cup crumbled feta cheese (optional)
- 1/2 cup sliced mushrooms (optional)
- 1/2 cup cooked chickpeas (optional)
Dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
1. In a large mixing bowl, combine the mixed greens, sliced red onions, grated carrots, chopped fresh parsley, and chopped chives.
2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
3. Pour the dressing over the salad and toss gently to coat all of the ingredients.
4. If desired, add diced avocado, crumbled feta cheese, sliced mushrooms, and cooked chickpeas to the bowl and toss again.
5. Serve immediately or refrigerate until ready to serve.
