Instructions

1. Preheat the oven to 300°F (150°C).
2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until softened, about 5 minutes.
3. Add the tomato paste, oregano, and paprika to the skillet and stir well. Cook for another minute, making sure not to burn the spices.
4. Season the leg of lamb with salt and pepper on all sides. In a small bowl, mix together the chicken broth and red wine. Rub the mixture all over the lamb, coating it thoroughly.
