granulated sugar cookies pistachio and dried cherries

Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 cup finely chopped pistachios
- 1 cup dried cherries, halved
Steps
1. Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper.
2. In a large mixing bowl, cream together 1 cup of butter and 1 cup of granulated sugar until light and fluffy.
3. Beat in 2 eggs, one at a time, making sure each is fully incorporated before adding the next.
4. In a separate bowl, mix together 2 cups of all-purpose flour, ½ teaspoon of baking soda, and ½ teaspoon of salt.
5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
6. Fold in 1 cup of chopped pistachios and 1 cup of dried cherries.
7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
8. Bake for 10-12 minutes, or until the edges are lightly golden brown and the centers are still slightly soft.
9. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
10. Once cooled, decorate with additional pistachios, dried cherries, or any other desired toppings. Enjoy!
