Granny's Strawberry Preserves Filled Cookies Recipe
Ingredients:
For the cookies:
- 1 cup unsalted butter, softened to room temperature
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
For the strawberry preserves:
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 2 cups fresh or frozen strawberries, hulled and chopped
Instructions:
Step 1: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 2: In a large mixing bowl, cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.
Step 3: Beat in the egg and vanilla extract until fully incorporated.
Step 4: In a separate small bowl, whisk together the flour, baking powder, and salt.
Step 5: Gradually add the dry ingredients to the wet mixture and mix until just combined.
Step 6: Divide the dough into two equal portions and wrap each portion in plastic wrap. Chill in the refrigerator for at least 30 minutes.
Step 7: While the dough is chilling, make the strawberry preserves. In a medium saucepan, whisk together the sugar and cornstarch until well combined.
Step 8: Add the chopped strawberries to the saucepan and stir to coat them with the sugar mixture.
Step 9: Cook over medium heat, stirring occasionally, until the mixture thickens and the fruit is heated through. Remove from heat and let cool completely.
Step 10: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Step 11: Flour a clean, flat surface and roll out one portion of the chilled dough to about 1/4 inch thickness.
Step 12: Place small dollops (about 1 tablespoon) of the strawberry preserves on top of the rolled-out dough, leaving about an inch between each dollop.
Step 13: Roll up the dough tightly around the preserves, starting from one of the longer sides and working your way to the other.
Step 14: Use a sharp knife to cut the roll into bite-sized cookies, being sure to cut through the center of each cookie so that you can see the strawberry preserves inside.
Step 15: Place the cookies on the prepared baking sheets, spacing them evenly apart.
Step 16: Repeat with the remaining portion of dough and any leftover strawberry preserves.
Step 17: Bake for 12-15 minutes, or until the edges are lightly browned and the centers are still slightly soft. Allow to cool completely before serving and storing.
