Grandma's Slow Cooker Swiss Steak Recipe
----------------------------------------
Ingredients
------------
* 1 lb flank steak
* 2 tbsp vegetable oil
* 1 onion, chopped
* 4 cloves garlic, minced
* 1 green bell pepper, sliced
* 1 red bell pepper, sliced
* 2 cups sliced mushrooms
* 1 cup beef broth
* 1 tsp dried thyme
* Salt and pepper to taste
* 1 cup shredded cheddar cheese (optional)
Instructions
------------
### Step 1: Prepare the meat
Trim any excess fat from the flank steak, then season both sides with salt and pepper.
### Step 2: Sauté the vegetables
In a large skillet over medium-high heat, add the vegetable oil and sauté the onion, garlic, green bell pepper, red bell pepper, and mushrooms for about 5 minutes until the vegetables are tender.
### Step 3: Add the steak
Place the flank steak into the skillet with the vegetables and cook for an additional 2-3 minutes on each side until browned. Remove the steak and vegetables from the skillet and set aside.
### Step 4: Combine the sauce
In a separate saucepan, combine the beef broth, dried thyme, salt, and pepper. Bring to a boil over high heat, then reduce the heat to low and let the sauce simmer for about 5-10 minutes until reduced.
### Step 5: Transfer to the slow cooker
Transfer the flank steak and vegetables back into the skillet, then pour the beef broth sauce all over it. Make sure everything is coated evenly.
### Step 6: Cook in the slow cooker
Cover and cook on low for about 8-10 hours or high for 4-6 hours until the flank steak is tender and falls apart easily with a fork. If desired, top with shredded cheddar cheese during the last 30 minutes of cooking for an extra cheesy flavor.
### Step 7: Serve and enjoy!
Remove the slow cooker Swiss steak from the pot and let it rest for about 5-10 minutes before slicing. Serve with your favorite sides, such as mashed potatoes or rice, and enjoy this delicious comfort food!
