Grandma Moyers Rhubarb and Strawberry Coffee Cake Recipe
Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup milk
- 1/2 cup melted butter, plus 1 tablespoon for greasing the pan
- 1 teaspoon vanilla extract
- Zest and juice of 1 orange
- 1/4 cup chopped fresh rhubarb
- 1/4 cup chopped fresh strawberries
- Powdered sugar and sliced fresh strawberries, for serving
Instructions:
Step 1: Preheat the oven to 350 degrees Fahrenheit. Grease an 8-inch round cake pan with 1 tablespoon of melted butter.
Step 2: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix well until evenly combined.
Step 3: Add the eggs, milk, melted butter, vanilla extract, orange zest, and juice to the dry ingredients. Mix with an electric mixer on medium speed until just combined. Be sure not to overmix.
Step 4: Fold in the chopped rhubarb and strawberries until evenly distributed in the batter.
Step 5: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake for 30-35 minutes or until a toothpick inserted in the center of the cake comes out clean.
Step 6: Allow the cake to cool completely in the pan on a wire rack before removing it and slicing it into pieces. Serve with powdered sugar and fresh strawberries, if desired.
