Grandma Elaine's Unstuffed Sweet and Sour Cabbage Recipe
Ingredients:
* 1 large head of green cabbage
* 2 cups of uncooked white rice
* 4 cups of water
* 1 onion, diced
* 3 cloves of garlic, minced
* 1 carrot, grated
* 1 cup of peas
* 1/2 cup of chopped green onions
* 1/4 cup of soy sauce
* 1/4 cup of cornstarch
* 1 tablespoon of honey
* 1 tablespoon of vegetable oil
* Salt and pepper, to taste
Instructions:
Step 1: Cook the rice according to package instructions. Drain and set aside.
Step 2: Cut off the base of the cabbage head and slice it into wedges. Remove the outer leaves and discard them.
Step 3: In a large pot, bring water to a boil. Add the cabbage wedges and cook for 5-7 minutes or until they start to soften. Drain and set aside.
Step 4: Heat vegetable oil in a large skillet over medium heat. Add diced onions and minced garlic and sauté until fragrant.
Step 5: Grate the carrots and add them to the skillet, stirring to combine with the onion and garlic mixture.
Step 6: Cook the carrots for a few minutes or until they start to soften. Add the peas and green onions, and continue cooking for another minute.
Step 7: In a separate small bowl, whisk together cornstarch and soy sauce to make a slurry. Pour it over the vegetables in the skillet and stir to combine. Cook for 2-3 minutes or until the mixture thickens.
Step 8: Add the cooked rice to the skillet and mix well with the vegetable mixture.
Step 9: Arrange the cabbage wedges on a serving dish, cut side up. Spoon the rice and vegetable mixture over the cabbage and serve hot.
Tips:
* For a spicier flavor, add some red pepper flakes while cooking the vegetables.
* If you prefer your cabbage to be more tender, you can steam it for 10-15 minutes before boiling.
* You can also use other types of cabbage like red or purple cabbage for this recipe.
