- 1 cup golden fruit (apples, pears, apricots, etc.)
- 1 tsp ground cinnamon
Instructions:
1. Rinse the short-grain brown rice thoroughly in cold water until the water runs clear. Drain the rice and transfer it to a medium saucepan with 2 cups of water and 1/4 teaspoon of salt.
2. Bring the mixture to a boil over high heat, then reduce the heat to low and cover the saucepan tightly. Let the rice simmer for 35-40 minutes or until the water is absorbed and the rice is tender.
3. Meanwhile, preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper.
4. In a large mixing bowl, whisk together the melted butter, honey, maple syrup, light brown sugar, eggs, and vanilla extract until well combined.
5. Once the rice is cooked, remove it from heat and let it cool for a few minutes.
6. Add the chopped mixed nuts, dried cranberries or raisins, golden fruit, and ground cinnamon to the bowl with the butter mixture, and stir everything together until well combined.
7. Pour the rice mixture into the prepared baking dish and press it down firmly with your hands or a spatula to create an even layer.
8. Bake the rice bars for 25-30 minutes or until they are golden brown on top and firm to the touch.
9. Let the rice bars cool completely in the pan, then cut them into bars for serving.
