Golabki Stuffed Cabbage Rolls Recipe
Ingredients:
- 1 head of green cabbage
- 1 pound ground beef or pork
- 1 cup cooked white rice
- 2 eggs, beaten
- 1/4 teaspoon cumin
- 1/4 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup chicken or vegetable broth
- 1 cup sour cream
- Fresh parsley, chopped
Instructions:
1. Begin by blanching the cabbage. Fill a large pot with boiling water and carefully submerge the head of cabbage, making sure it's fully immersed. Cook for 5 minutes then remove the cabbage from the boiling water using tongs or a slotted spoon.
2. While the cabbage is blanching, prepare the filling. In a large mixing bowl, combine ground beef or pork, cooked white rice, eggs, cumin, cinnamon, salt and pepper to taste. Mix well with your hands until everything is evenly distributed.
3. Now that the cabbage has cooled down enough to handle, carefully remove each leaf from the stem and lay them flat on a cutting board. Using a sharp knife, cut out the center of each leaf, leaving a 1-inch border around the edges.
4. Spoon about 2 tablespoons of filling onto the center of each cabbage leaf. Fold the top over the filling, then fold in the sides and bottom to create a sealed package.
5. Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic and sauté until softened.
6. Arrange the stuffed cabbage rolls seam-side down in the skillet, filling the bottom of the pot with as many rolls as possible. Pour tomato sauce and chicken or vegetable broth over the top of the rolls, making sure they are completely covered.
7. Cover the skillet with aluminum foil and simmer for 45 minutes. After 45 minutes, remove the foil and pour sour cream on top of the rolls. Simmer for an additional 10-15 minutes or until the sauce has thickened and the cabbage is tender.
