- 1 cup glutinous rice flour
- 3/4 cup water
- 1/2 tsp salt
- 2 tbsp vegetable oil
- 1/4 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- Zest and juice of 2 apricots
- 1/2 cup dried apricots, chopped
Instructions:
1. In a large mixing bowl, combine the glutinous rice flour, water, salt, and vegetable oil. Mix well until you have a smooth batter consistency.
2. Stir in the granulated sugar, baking powder, vanilla extract, apricot zest, and apricot juice.
3. Fold in the chopped dried apricots.
4. Line a steamer basket or a heatproof dish with parchment paper and pour the batter into it.
