Ingredients

  • * 2 cups cooked white rice
  • * 1 cup cooked shrimp, peeled and deveined
  • * 1/2 cup chopped marinated artichokes
  • * 1/2 cup diced cucumber
  • * 1/2 cup diced red bell pepper
  • * 1/4 cup chopped fresh parsley
  • * 1/4 cup chopped fresh mint
  • * 1/4 cup chopped fresh basil
  • * 1/4 cup olive oil
  • * 1/4 cup white wine vinegar
  • * 1 tablespoon Dijon mustard
  • * Salt and pepper to taste
  • * Optional: diced tomatoes, crumbled feta cheese, sliced red onion, chopped green olives.
