Garlicy Tortellini Soup with Sausage Tomatoes and Spinach Recipe
Ingredients:
- 8 oz tortellini
- 2 tbsp olive oil
- 1 lb Italian sausage, ground
- 2 cups chicken broth
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with juice
- 2 cups fresh spinach leaves, chopped
- Salt and pepper to taste
Instructions:
1. Cook tortellini according to package instructions until al dente.
2. In a large saucepan, heat olive oil over medium heat. Add ground Italian sausage and cook until browned, about 5-7 minutes.
3. Add minced garlic to the pan and cook for another minute, stirring constantly to avoid burning.
4. Pour in chicken broth and bring to a simmer.
5. Add diced tomatoes with juice to the saucepan and stir well.
6. Let the soup simmer for about 10 minutes, allowing the flavors to develop.
7. Add chopped fresh spinach leaves to the pan and stir until wilted, about 2-3 minutes.
