Make a Garlicy Shrimp Primavera with Shishito Peppers Recipe
Ingredients:
- 1 pound large shrimp, peeled and deveined
- Salt and pepper to taste
- 4 tablespoons olive oil
- 5 garlic cloves, minced
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/2 cup dry white wine
- 1 cup cherry tomatoes, halved
- 1/2 cup shishito peppers, stemmed and sliced
- Juice of 1 lemon
- Red pepper flakes to taste (optional)
Instructions:
1. In a large bowl, toss the shrimp with olive oil, garlic, salt, and pepper until well coated. Set aside.
2. Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove from the skillet and set aside on a plate.
3. In the same skillet, add the remaining olive oil and sauté the parsley and basil for 1 minute.
4. Add the dry white wine and cherry tomatoes to the skillet. Cook for 2-3 minutes until the tomatoes start to burst.
5. Add the sliced shishito peppers to the skillet and cook for 2-3 minutes until they start to blister.
6. Return the cooked shrimp to the skillet and stir well to combine with the vegetables.
7. Squeeze the juice of one lemon over the top of the skillet and add a pinch of red pepper flakes (optional). Stir well.
