Summer is a great time to enjoy fresh, delicious corn on the cob. With this simple recipe, you can make a creamy, satisfying corn chowder that's perfect for a warm summer evening. Here are the steps:
Ingredients
-----------
* 8 ears of corn, shucked and kernels removed
* 1 onion, diced
* 2 cloves garlic, minced
* 4 cups vegetable or chicken broth
* 1 cup heavy cream
* 2 tablespoons butter
* 1 teaspoon paprika
* Salt and pepper to taste
* Fresh parsley for garnish
Instructions
------------
1. Start by making sure all your ingredients are ready. Shuck the corn and remove the kernels, set them aside. Dice the onion and mince the garlic. Melt the butter in a large pot or Dutch oven over medium heat.
2. Add the diced onion to the pot and sauté until it's softened, about 5 minutes. Then add the minced garlic and cook for another minute until fragrant.
3. Add the shucked corn kernels to the pot and stir well. Cook for 5-7 minutes until the corn is slightly softened.
4. Pour in the vegetable or chicken broth, along with the paprika, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes.
5. After 20 minutes, remove the corn from the pot using a slotted spoon and transfer it to a blender. Blend until smooth, then return the corn to the pot and stir well.
6. Pour in the heavy cream and stir until fully combined. Cook for another 5-7 minutes until heated through.
7. Taste and adjust seasoning as needed. Serve hot with fresh parsley garnish.
