- 1/2 cup unsalted butter, cold and cut into small cubes
- 1 cup fresh strawberries, diced
- 1/2 cup heavy cream
- 1 large egg
Instructions:
Step 1: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. In a medium bowl, combine flour, sugar, baking powder, and salt.
Step 2: Add the butter cubes to the dry mixture and using a pastry blender or your fingers, mix until you get a crumbly texture.
Step 3: Fold in diced strawberries into the mixture. Do not overmix as it will make the scones tough.
Step 4: On a lightly floured surface, knead the dough for about 2 minutes to bring everything together. Then, roll it out to a thickness of about 1/2 inch (1.2 cm).
Step 5: Using a biscuit cutter or a sharp knife, cut out the scones and place them on the prepared baking sheet.
Step 6: Brush the tops of the scones with heavy cream and bake for about 15-20 minutes or until they are golden brown.
Step 7: In a small bowl, beat the egg until it's frothy. Brush the egg wash over the scones just before baking.
Step 8: Remove from oven and let cool for about 15 minutes before serving. Serve with your favorite jam or whipped cream and enjoy!
