  17. - 2 teaspoons fresh lemon juice
  18. - 1 large egg yolk
  19. - 1 tablespoon heavy cream
  20. - 1 tablespoon white sugar (optional)

  22. 1. Begin by making the crust. In a food processor, combine the flour, salt, and sugar; pulse until combined. Add the butter pieces and pulse several times until the mixture resembles coarse crumbs.
  23. 2. Slowly add ice water, 1 tablespoon at a time, pulsing after each addition, until the dough comes together into a ball. If the dough is too sticky, add more flour. Divide the dough in half and flatten each half into a disk; wrap tightly and refrigerate for at least an hour.
