French Country Apple Pie Recipe
Ingredients:
For the crust:
- 1 3/4 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 3/4 cup unsalted butter, cut into small pieces
- 1/4 to 1/2 cup ice water
For the filling:
- 6 cups sliced and peeled apples (about 6 medium apples)
- 2 tablespoons unsalted butter
- 2/3 cup sugar
- 1/4 cup brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 teaspoons fresh lemon juice
- 1 large egg yolk
- 1 tablespoon heavy cream
- 1 tablespoon white sugar (optional)
Instructions:
1. Begin by making the crust. In a food processor, combine the flour, salt, and sugar; pulse until combined. Add the butter pieces and pulse several times until the mixture resembles coarse crumbs.
2. Slowly add ice water, 1 tablespoon at a time, pulsing after each addition, until the dough comes together into a ball. If the dough is too sticky, add more flour. Divide the dough in half and flatten each half into a disk; wrap tightly and refrigerate for at least an hour.
3. Preheat your oven to 375°F (190°C).
4. Next, make the filling. In a large mixing bowl, combine sliced apples, butter, sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and egg yolk.
5. Roll out one disk of dough to fit a 9-inch pie dish. Transfer the apple mixture to the pie dish, spreading it evenly.
6. Roll out the second disk of dough to the same size as the first. Cut some slits in the top of the crust to allow steam to escape.
7. Place the top crust over the apple mixture. Brush the top with heavy cream and sprinkle with white sugar (if using).
8. Bake for 50-60 minutes, or until the crust is golden brown and the filling is bubbling. Allow to cool before serving.
