  • * 1 cup of chopped fresh spinach
  • * 1/2 cup of crumbled feta cheese
  • * 2 tablespoons of minced red onion
  • * 2 tablespoons of chopped fresh parsley
  • * 1/4 cup of olive oil
  • * 2 tablespoons of balsamic vinegar
  • * 1/2 teaspoon of salt
  • * 1/4 teaspoon of black pepper
  • * 8 cups of seedless watermelon, sliced into thin rounds
  • * Optional: chopped mint or basil for garnish.
