  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large mixing bowl, combine 1 cup of uncooked white rice, 2 cups of water, salt, and pepper to taste. Cover the bowl with aluminum foil and let it sit for 15 minutes.
  3. Step 3: Remove the foil from the bowl and stir in 1 cup of grated cheddar cheese, 1 cup of shredded chicken (cooked or canned), and 1/2 cup of diced onion. Mix well to combine all ingredients.
  4. Step 4: Transfer the rice mixture to a greased 9x13 inch baking dish. Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes or until the rice is cooked through and the cheese is melted.
  5. Step 5: Remove the foil from the baking dish and sprinkle an additional 1/4 cup of grated cheddar cheese over the top of the casserole. Return the baking dish to the oven and bake for another 5-10 minutes or until the cheese is melted and bubbly.
