Ingredients:
* 1 pound boneless, skinless turkey breast
* Salt and pepper
* All-purpose flour
* Eggs
* Milk
* Breadcrumbs (optional)
* Olive oil or butter
* Capers
* Lemon juice
* Lemon zest
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Slice the turkey breast into thin, even slices. Season both sides with salt and pepper.
3. In a shallow dish, whisk together the flour and breadcrumbs (if using).
4. In another shallow dish, whisk together the eggs and milk.
