  • * 1 large eggplant, peeled and diced
  • * 2 medium zucchinis, sliced
  • * 1 medium sweet red pepper, seeded and chopped
  • * 1 onion, chopped
  • * 3 cloves garlic, minced
  • * 2 tablespoons olive oil
  • * 2 cups vegetable broth
  • * 1 teaspoon dried oregano
  • * Salt and pepper to taste
  • * Optional: chopped fresh parsley for garnish
