Ingredients

  • * 1 cup all-purpose flour
  • * 1/2 cup granulated sugar
  • * 1/2 cup cornmeal (yellow or white)
  • * 1 teaspoon baking powder
  • * 1/2 teaspoon baking soda
  • * 1/2 teaspoon salt
  • * 1 large egg, beaten
  • * 1 cup buttermilk (or make your own by mixing 1 tablespoon vinegar or lemon juice with 1 cup milk)
  • * 1/4 cup melted butter, plus extra for greasing the muffin tin
  • * 1 teaspoon vanilla extract
  • * Optional: 1/2 cup chopped fresh fruit or nuts (blueberries, strawberries, pecans, etc.)
