Easy Swedish Apple Pie Recipe
Ingredients:
* 1 1/2 cups all-purpose flour
* 1 teaspoon salt
* 3/4 cup unsalted butter, chilled and cut into small pieces
* 1/4 to 1/2 cup ice water
* 6 cups thinly sliced apples (about 6 medium apples)
* 2 tablespoons lemon juice
* 1/2 cup granulated sugar
* 1 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon salt
* 2 tablespoons unsalted butter, cut into small pieces
* 1 large egg yolk
* 1 tablespoon heavy cream
Instructions:
Step 1: Preheat the oven to 375°F (190°C).
Step 2: In a medium bowl, mix together the flour and salt. Add the chilled butter pieces and using a pastry cutter or your fingers, combine until the mixture resembles coarse sand. Gradually add ice water 1 tablespoon at a time until the dough comes together in a ball.
Step 3: Divide the dough into two equal parts, wrap each part in plastic wrap, and refrigerate for at least 30 minutes.
Step 4: While the dough is chilling, make the apple filling. In a large bowl, mix together the sliced apples, lemon juice, sugar, cinnamon, nutmeg, and salt until well combined.
Step 5: Roll out one of the dough halves on a lightly floured surface into a 12-inch round. Carefully transfer it to a 9-inch pie dish, letting the excess dough hang over the edges.
Step 6: Pour the apple mixture into the prepared crust, mounding it slightly in the center. Dot the top with small pieces of butter.
Step 7: Roll out the second half of the dough and carefully lay it over the top of the apples. Trim the overhanging dough to about 1 inch. Fold the edges up and under, crimping the edges to seal the pie. Use a sharp knife to make several vents in the top of the crust to allow steam to escape.
Step 8: In a small bowl, whisk together the egg yolk and heavy cream until smooth. Brush the mixture over the top of the pie.
Step 9: Bake for 50-60 minutes or until the crust is golden brown and the filling is bubbling. Allow the pie to cool on a wire rack before serving. Enjoy!
