Spicy Beans and Rice Recipe
Ingredients:
- 1 cup of white rice
- 1 can of black beans, drained and rinsed
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 2 cups of chicken broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Fresh cilantro for garnish (optional)
Instructions:
1. Rinse the rice in a fine mesh strainer until the water runs clear, drain well.
2. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic, sauté until they are translucent, about 5 minutes.
3. Stir in the diced bell peppers and cook for another 5 minutes, or until they are softened.
4. Add the rice to the pan, stirring well to coat it with the oil and vegetables.
5. Pour in the chicken broth, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Bring to a boil, then reduce the heat to low and cover.
