easy slow cooker chicken and dumplings

Ingredients

  • * 1 lb boneless, skinless chicken breasts or thighs
  • * 2 cups frozen or homemade dumplings (please see my recipe for easy dumplings)
  • * 4 cups low-sodium chicken broth
  • * 1 cup sliced carrots
  • * 1 cup chopped onions
  • * 1/2 cup frozen peas
  • * 2 tablespoons cornstarch mixed with 1/4 cup water (for the thickening sauce)
  • * 2 cloves garlic, minced
  • * 1 teaspoon ground ginger
  • * Salt and pepper to taste
  • * Chopped fresh parsley or green onions for garnish (optional)
  • * Olive oil or cooking spray (for greasing the slow cooker if needed)
