  • * 1 cup green lentils
  • * 2 cups water
  • * 1 teaspoon cumin seeds
  • * 1 teaspoon coriander seeds
  • * 1 teaspoon turmeric powder
  • * 1 teaspoon paprika
  • * 1 teaspoon black pepper
  • * 1 teaspoon salt
  • * 1 cup basmati rice
  • * 2 cups vegetable broth
  • * 2 tablespoons olive oil
  • * 1 onion, chopped
  • * 3 cloves garlic, minced
  • * 1 teaspoon fresh ginger, grated
  • * 1/2 cup parsley, chopped
  • * 1/4 cup lemon juice
  • * Optional: cilantro, roasted nuts, and/or dried fruit.
