- 1 lb German sausage, sliced
- 2 lbs beef brisket, cut into bite-sized pieces
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cans diced tomatoes, undrained
- 6 cups beef broth
- 1/4 cup apple cider vinegar
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Ingredients:
- 2 lbs beef stew meat
- 1 onion, chopped
- 4 garlic cloves, minced
- 1 can diced tomatoes with juice
- 1 cup red wine
- 6 cups beef broth
- 1 tbsp paprika
- 1 tsp black pepper
- 2 bay leaves
- 4 sprigs fresh thyme
- Salt, to taste
- Sour cream, for serving (optional)
Instructions:
Step 1: Preheat the slow cooker or crock pot.
Step 2: Season the beef stew meat with salt and pepper. Heat a large skillet over medium-high heat, then add the beef and brown on all sides. Remove from the skillet and set aside.
Step 3: In the same skillet, sauté the chopped onion and minced garlic until softened. Add the paprika, black pepper, bay leaves, and thyme.
Step 4: Stir in the diced tomatoes with juice, red wine, beef broth, and browned beef stew meat. Bring to a simmer.
Step 5: Transfer the mixture to the slow cooker or crock pot.
Step 6: Cover and cook on low for 7-8 hours, or high for 4-5 hours, until the beef is tender and falls apart easily with a fork. Season with salt to taste.
